About this winery
Coming from a farming background, we know that everything starts in the vineyard. Working the soil and respecting the plant are prerequisites for a healthy, ripe, high-quality harvest. This is the beginning of a process that continues from the harvest, carried out at the optimum moment of grape ripeness, then in the winery and cellar, right through to bottling.

Production notes
The grapes are harvested by hand and gently gravity-fed into the press. Pressing is slow, and the juice is cooled and decanted into stainless steel tanks. After settling, the must is gravity-fed into barrels. Alcoholic and malolactic fermentations take place in oak barrels (10% of which are new) or in conical oak vats. Aging on fine lees lasts until the month of June following the harvest. From harvest to bottling, we keep inputs such as SO2 to a minimum.
Tasting notes
This cuvée offers braided aromas of honeysuckle and lemon zest. Its massive body, supported by a dry extract, releases the “Limoux grain”. The palate is full and harmonious, with a fresh, elegant finish.
