About this winery
The project of Bodegas Volver was founded in 2004 by Rafael Cañizares, enologist through studies and viticulturist through his family tradition of four generations bound to the vine and wine. The pillars of the bodega are based on the repositioning of quality Spanish wines and recovering old indigenous vineyards which, either through low production or lack of generational succession, had been lost.

Product notes
From organic vineyards on the Castilian plateau, grown under a continental climate with wide diurnal temperature shifts. Sandy-limestone soils help retain freshness in Verdejo. Grapes are harvested at night and fermented in stainless steel at low temperatures to preserve aromatic intensity and vibrancy.
Production notes
Controlled fermentation at a temperature of 15°C, clean foam in stainless steel vats. Particular care is taken to maintain the freshness and acidity for which Verdejo is known.
Tasting notes
Yellow with green highlights, crystal clear. Aromas of white flowers, stone fruits, and aromatic herbs. Very fresh with good acidity, fruity and balanced.
