Product notes
This is one of the oldest grape varieties native to Piedmont. The name certainly comes from a term used in the Asti dialect, "grignole", indicating the presence of numerous grape seeds. It's a demanding grape in terms of climate and soil, and although difficult to vinify, it offers an original, unpredictable and enchanting wine.
Production notes
Grape selection generally takes place in late September or the first week of October and is conducted entirely by hand. The grapes are pressed the same evening and placed in stainless steel vats for alcoholic fermentation with an assisted temperature not exceeding 28°C. Maturation of the wine continues in the stainless steel vats until bottling.
Tasting notes
Pale ruby-red color with subtle amber highlights. The fine, delicate bouquet offers notes of twigs and dried flowers, accompanied by aromas of white pepper. Lively and tangy on the palate, yet refined and dry, with a typical presence of silky tannins and a lovely almond finish.
