Production notes

Produced without any added sulfites from harvest to bottling. The maceration of partially destemmed grapes, harvested manually at full ripeness, lasts around 15 days in stainless steel vats for optimal extraction of phenolic compounds, which give the wine its consistency. Nine months of aging on fine lees, protected from oxygen, nourishes, adds complexity, and stabilizes the wine, giving it a spicy and mineral originality.

Tasting notes

It has a deep purple color with violet highlights. This wine expresses itself with aromas of cherry, blackberry, and blueberry crowned with spicy and mineral notes. The palate is dense, round, and balanced with a remarkable spicy and licorice finish.

Beaucoup de fruit rouge gouleyant à boire rafraîchi en ouverture de repas avec quelques cochonnailles et autre bouchées pour s’ouvrir l’appétit.

Nine months’ ageing on fine lees. Mid greyish crimson. That dark and dusty aroma that always reminds me of Gamay grown on granite. Extremely pure and clean for a wine with no added sulphites. Bright, dry tannic finesse and lovely fruit at the core, perfumed from start to finish. Impressive length and of course beautifully fresh. (JH)''
